Fersht gives a complete set of pK values in his 1999 book Structure and Mechanism in Protein Science: A Guide to Enzyme Catalysis and Protein Folding (1). The pK values given are from model compounds (small peptides) reported in Tanford (1962), Tanford and Roxby (1972) or Shaked, Szajewski and Whitesides (1980) (2-4).
